Curry Chicken

I LOVE curry so I wanted to make the dish on my own, tasting like it came from a restaurant BUT with organic ingredients which you can't get at most restaurants. I created this from a few different idea's I had and from a few other recipes I saw and created my own Curry Chicken. This recipe serves 2.  Recipe: 1 chicken breast, cut and drenched in dry rub (recipe below) after sitting at least a half hour 2 carrots cut biased 1/2  large onion or one small/medium onion cut in half and sliced thin 3 cloves garlic, minced 1 1/2 cups unsweetened coconut milk 3 teaspoons cornstarch Coconut oil for cooking Combine the coconut milk and cornstarch until no lumps appear; set aside. Cook the carrots and onions down in about 1 Tablespoon of coconut oil until crisp tender. The onions will be a little more done than the carrots. Remove from pan and set aside in a bowl. Oven Roasted Chicken

I love a good chicken dinner. I wanted something different though. Different flavors to eat together. So I created this! Ingredients: Whole Chicken, rinsed and giblets taken out or off (mine was a little over 4 lbs) 1 medium sized onion, peeled and cut in half 3 stalks of celery, washed 1 small lemon 3 carrots, peeled and cut into big chunks 7 cloves of peeled garlic 3 bay leaves Spice Rub Blend (1 tsp each of garlic powder, onion powder, oregano and thyme. 1/2 teaspoon of sage, rosemary and basil.) 1/4 Cup Brown Sugar Sunflower Oil Take the spice rub blend and rub it under the skin and the remainder on top of the skin. Do the same with the brown sugar; first under the skin then on top, making sure the spice rub and brown sugar are rubbed in well for better flavor. Coconut Chicken with Pina Colada Sauce

So trying new foods is something I love to do, because who wants that boring old spaghetti every other day! My new venture today was this coconut chicken with the Pina Colada sauce! Have you ever had the coconut shrimp at Red Lobster? Well that is kind of what I was getting at here! And it turned out FABULOUS!!! So I wanted to share the recipe with everyone so you could try it for yourself! Pina Colada Sauce 3/4 cup sour cream 1 cup Pina Colada drink mix 1/4 cup crushed pineapple 1 Tablespoon pineapple juice Gently combine the sour cream with the drink mix until combined. Don't over mix here. Fold in the crushed pineapple and the pineapple juice. Refrigerate until needed. As it sits it tastes better so I made this first.
