Curry Chicken

Image
I LOVE curry so I wanted to make the dish on my own, tasting like it came from a restaurant BUT with organic ingredients which you can't get at most restaurants. I created this from a few different idea's I had and from a few other recipes I saw and created my own Curry Chicken. This recipe serves 2.  Recipe: 1 chicken breast, cut and drenched in dry rub (recipe below) after sitting at least a half hour 2 carrots cut biased 1/2  large onion or one small/medium onion cut in half and sliced thin 3 cloves garlic, minced 1 1/2 cups unsweetened coconut milk 3 teaspoons cornstarch Coconut oil for cooking Combine the coconut milk and cornstarch until no lumps appear; set aside. Cook the carrots and onions down in about 1 Tablespoon of coconut oil until crisp tender. The onions will be a little more done than the carrots. Remove from pan and set aside in a bowl. Add a little more coconut oil and then the chicken. Cook chicken until just about done. Add t...

Oven Roasted Chicken

Image
I love a good chicken dinner. I wanted something different though. Different flavors to eat together. So I created this! Ingredients: Whole Chicken, rinsed and giblets taken out or off (mine was a little over 4 lbs) 1 medium sized onion, peeled and cut in half 3 stalks of celery, washed 1 small lemon 3 carrots, peeled and cut into big chunks 7 cloves of peeled garlic 3 bay leaves Spice Rub Blend (1 tsp each of garlic powder, onion powder, oregano and thyme. 1/2 teaspoon of sage, rosemary and basil.) 1/4 Cup Brown Sugar Sunflower Oil Take the spice rub blend and rub it under the skin and the remainder on top of the skin. Do the same with the brown sugar; first under the skin then on top, making sure the spice rub and brown sugar are rubbed in well for better flavor. Take the lemon and zest it over the whole chicken as evenly as you can. Then slice the lemon in half and juice in a container to remove and seeds the carefully pour the lemon juice over the ...

Twenty Dinners - A Journey Into the Culinary World

Image
Twenty Dinners is a exquisitely designed cook book, and yet it is more. Ithai Schori and Chris Taylor bring one through a journey of the seasons with their beautiful photography and seasonal foods and drinks.  The dinner's are set as whole meals from main dishes, to desserts and even drink suggestions. The recipes are unique and not the run-of-the-mill home cooking that I do a lot of. They are upscale and yet simple. To take a normal pork chop dinner and create Pork Chops and Charred Applesauce, Braised Fennel with Mint, Roasted New Potatoes  finished with Lillie's Sticky Toffee Pudding is just amazing to me. These are meals you would find in a 5 star restaurant, yet I have the recipes in this treasure of a book. Not only are there recipes in here, but they also have included techniques, terms and handy advice. This is great for any cook, no matter where you are at in the culinary world. I am always open to advice, especially from professional...

Coconut Chicken with Pina Colada Sauce

Image
So trying new foods is something I love to do, because who wants that boring old spaghetti every other day! My new venture today was this coconut chicken with the Pina Colada sauce! Have you ever had the coconut shrimp at Red Lobster? Well that is kind of what I was getting at here! And it turned out FABULOUS!!! So I wanted to share the recipe with everyone so you could try it for yourself! Pina Colada Sauce 3/4 cup sour cream 1 cup Pina Colada drink mix 1/4 cup crushed pineapple 1 Tablespoon pineapple juice Gently combine the sour cream with the drink mix until combined. Don't over mix here. Fold in the crushed pineapple and the pineapple juice. Refrigerate until needed. As it sits it tastes better so I made this first. Coconut Chicken 2 Chicken breasts, cut into strips 2 eggs 1/3 cup of coconut milk 1 1/2 cups of flour 1 1/2 cups sweetened coconut salt and pepper Oil for frying Combing the eggs and the coconut milk in a shallow dish. I...

A Victory With a Picky Eater

Image
I KNOW I am not the only mother to deal with a picky eater, and as an ex-picky eater myself, I kind of know how to go about it and force is just not an option. Just like when I was a kid, if I tell my 4 year old he HAS to eat what I put in front of him or he goes hungry guess what? He will go hungry. And he won't complain about it! Sometimes he will say "I'm hungry" and I'll come back with "Well you could eat what I made for dinner" and then he drops it.  So I felt I had to go about this a different way, because I used to react just like him in the above situation. I was stubborn as an ox and so is he. Can be a good trait if we raise him right and I think we are on a good road to that.  Well lately he will only eat peanut butter sandwiches, bologna, and chicken nuggets. Along with chips and treats obviously. But those are his main meals, oh and toast. He used to like spaghetti and since that's what I had on the dinner agenda that's what I...
