Buttermilk Pecan Pancakes

Pancakes from childhood...

I was doing a twitter party tonight and was reminded of this recipe my mom used to make us when we were kids. To me, they have always tasted like a tasty version of pecan pie. Less sweet and a delicious homemade pancake! Now, I don't have pictures, but am hoping to make them soon so I can add one! I have everything but pecans and it is almost 9pm!

Buttermilk Pecan Pancakes

3 eggs, separated
3 Tablespoons butter, melted
1 1/2 Cups flour
1/2 to 1 Cup chopped pecans
1 Tablespoon sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 2/3 Cup buttermilk*

In a bowl, beat the egg yolks and butter. Combine flour, pecans, sugar, baking powder, baking soda and salt; add to the egg mixture, alternately with buttermilk. Beat egg whites until soft peaks form. Fold into batter. Pour batter onto lightly greased griddle, about 1/4 cup; turn when bubbles form on top of pancakes. Cook until second side is golden brown.

Yield: About 16 pancakes

*To make buttermilk add 1 Tablespoon lemon juice OR white vinegar to milk to make 1 Cup. Make 2 Cups worth and leave 1/3 cup out.

  1. Benjamin won't eat them either because of the nuts lol. I only do a half cup of the nuts so it isn't over the top. I bet if you omitted the nuts altogether they would still be really good though. I've never tried it like that before!
